Prospero Sec

Prospero takes its name from the protagonist of The Tempest; considered to be the last play that Shakespeare wrote alone. Prospero uses his skills as a sorcerer to ensure he gets back his rightful title, Duke of Milan. Storms and other machinations facilitate events to meet these ends. This is a delicious sparkling wine with apple, pear and raspberry flavours and soft refreshing bubbles, perfect for every day celebrations.

Region

The area of Castilla-La Mancha, located in the central plateau of the Iberian Peninsula, is the world’s largest vineyard. Varietal wines, grape juice and sangrias are produced in this vast wine region. Airen and Tempranillo are the most typical grapes from this area.

Pale rose color, with a fine and constant bubble, pear and raspberry flavours that delight you taste buds, revealing a hint of seetness and plenty of refreshing fizz.
A treat to drink on its own or with just about anything from pasta salad to cheesecake.

A production technique, often referred to as Charmat Method is used. The wine undergoes a traditional primary fermentation, before yeast and sugar are added to the wine in pressurised tanks, where a second fermentation takes place. The closed tanks trap the natural bi-product of fermentation; carbon dioxide, which dissolves into the wine, to create the bubbles.
The wine is then bottled to ensure a fresh and aromatic product.

PUERTA DE ALCALÁ Crianza 2019

Charles III restored the Puerta de Alcalá, one of his flagship projects of his progress plans in the Madrid city. It turned into the main entrance to the city and the most representative monument during his reign. At the same time, Puerta de Alcalá has been a symbol of modernity and of opening of new markets for our winery.

Cherry red color, medium-high layer and compact edging. Aromatic, elegant with good intensity. Memories of ripe black fruit, scrubland, balsamic. Background with touches of noble leather and vanilla. In the mouth it is complex, broad, alive. In the mouth, the fruity, mineral notes stand out, on fine sensations of cocoa. Persistent and elegant finish.
Ideal wine to accompany tapas and appetizers, cured cheeses, lean meats and game dishes.
The object of the coupage is to obtain a different and special wine, using the Tempranillo and Syrah varieties of several Spanish viticultural origins, which provide their own particularities. The grapes come from old vines and are collected manually. The vinifications are made in stainless steel tanks for 10-14 days with controlled temperatures of 26-28ºC. The wine remains in American oak barrels for 3-4 months until the end of the malolactic fermentation. After determining the mixture and the wines are assembled.

SERVING TEMPERATURE

Best served chilled (6-9ºC)

Pale yellow wine, with apple, pear and lemon aromas that lead to subtle sweet touches on the palate and a refreshing fizz with fine and consistent bubbles.
Delicious to enjoy by itself or with canapé, fish dishes or even apple pie.
Its production technique, often referred to as Charmat Method is based on a second fermentation of a white wine. It is elaborated in steel tanks that have been specially designed to stand pressures of up to 10 atmospheres. The second fermentation, when yeast and sugar are added to the wine causes carbon dioxide molecules to integrate into the liquid, transforming it into a sparkling wine. The wine is bottled only after it has completed the fermentation process. This makes of it a very expressive, aromatic and fresh wine, since, unlike other sparkling wines, which ferment for the second time in the bottle, it is not in contact with its lees. The wine is then bottled to ensure a fresh and aromatic product.

DULCE MARÍA SELECCION – Natural Sweet.

Vintage: 2021
Production area: Villarejo de Salvanés (Madrid)
Grape Variety: Malvar 100% (native grape)
Alcohol grade: 7,5 % Vol.
Product type: White grape must partially fermented

Region

The history of the wines of Madrid dates back to the beginning of the 13th century, what
means that the denomination ‘Vinos de Madrid’ is the result of an ancestral vine growing
tradition in Madrid. The D.O Vinos de Madrid covers, controls and protects since 1990 the
grapes and wines from 54 municipalities located in the South area of the community of
Madrid.
The area where Vinos de Madrid is established is South to the city of Madrid and it is divided
in three sub-regions: Arganda del Rey, Navalcarnero and San Martín. The Arganda Subregion is the largest one (Vinos Jeromín belongs to this sub-region). Our winery VINOS
JEROMÍN, S.L., family cellar in its third generation, is located in Villarejo de Salvanés, the
best area for vineyards of the whole D.O Vinos de Madrid. The winery is placed in the fertile
façade of the ‘Tajo River’ plain. This sub-area (Arganda del Rey) covers over 6.400 hectares
of vineyards, sitting on clayey terraces with excellent climatological conditions: an average
temperature of 14ºC, a rainfall of over 500 liters per square meter/year and more than
2.800 hours of sunshine per year. The average production of our vineyards is 4.000Kg/ha
and in some cases 1.000Kg/ha or 1.500Kg/ha. Most vineyard has cultivated 900 vines/ha
(‘Marco real’).
VINOS JEROMÍN, S.L. offers a wide variety of wines for any occasion or event and to any
consumer, from truly attractive young wines of high quality to Crianza and Reserva, etc.

Attractive pale yellow color, very clean and brilliant, with green lemon nuances.
Aromatic, with much fruit and delicate aniseed touches. In mouth it is soft, round and
persistent, with a very pleasant natural sweetness complemented with its good acidity
which makes it fresh in its end. Perfect for aperitif and dessert thanks to its low alcohol
grade, it goes well with shellfish.

The grapes come from selected bunches of the oldest vineyards of the variety Malvar,
picked up by hand in small cases in the early fresh hours of the day. The must macerates
with the skins to low temperature to get all the fruitiness of the grape. The alcoholic
fermentation is made to very low temperature until our wine maker considers the
sweetness ideal. In that moment, we take it out and cool it at 3ºC to stop the
fermentation. Afterwards, it is filtered with the aim of removing the yeasts and bacteria,
for getting the stability for its commercialization.

The bottling is made under the strong quality and health controls of the cellar and of the
Regulator Council. There is a limited number of bottles of this wine. Due to the
exhaustive respect in the elaboration process, some natural sediments may appear.

Short term (3 years)

No strong temperature changes. The best
temperature is between 14ºC and 16ºC during the whole year.

Very cold between 8ºC and 10ºC

Perfect for aperitifs and desserts thanks to its low alcohol grade; it goes well with shellfish.
